North America Council, 1998:  In 1998, the Coca-Cola Retailing Research Council (CCRRC) selected supermarket foodservice as the strategic issue to be addressed – specifically, the development of foodservice departments and their profitable operation. The objectives of this study were to understand the costs associated with delivering “restaurant-quality” meals in a supermarket setting and to identify ways to manage those cost elements to improve overall performance.
